Greek style chicken

Ingredients
- 1 Devonshire Red chicken brick
- 1 Devonshire Red chicken - jointed into 8
- 2 large onions, coarsely diced
- 2 bulbs of garlic, pealed and crushed
- 225g black Kalamata olives
- 2 tins plum tomatoes - crushed
- 1/2 tube tomato puree
- The zest of 2 lemons, finely julienned and juice reserved
- 1/4 pint intense chicken stock
- Plain flour
- 1/4 bottle dry white wine
- Olive oil
- Sea salt and freshly ground black pepper
Directions
- Soak the chicken brick in water for 15 minutes.
- Gently sweat onions and garlic in a little olive oil without colour in a saute pan. Remove.
- Lightly brown chicken pieces in the oil.
- Add remainder of ingredients and bring to a gentle simmer, transfer to chicken brick.
- Braise in oven at 180c (350f) for around 60 mins or until tender.
- Season to taste.
- Serve with white rice and a crisp green salad.
