Greek style chicken

  1. Soak the chicken brick in water for 15 minutes.
  2. Gently sweat onions and garlic in a little olive oil without colour in a saute pan. Remove.
  3. Lightly brown chicken pieces in the oil.
  4. Add remainder of ingredients and bring to a gentle simmer, transfer to chicken brick.
  5. Braise in oven at 180c (350f) for around 60 mins or until tender.
  6. Season to taste.
  7. Serve with white rice and a crisp green salad.
