Thai chicken cakes with sweet chilli sauce
Ingredients
- 2 chicken breasts - cubed
- 1 garlic clove - roughly chopped
- 1cm knob fresh root ginger - roughly chopped
- 1 small red onion - roughly chopped
- 1 tbsp coriander - chopped
- 1 green chilli - roughly chopped
- Salt and freshly ground black pepper
- 2 tbsp olive oil
- 1 spring onion - finely shredded
- Sweet chilli sauce - to serve
Directions
- Place the chicken, garlic, ginger, onion, coriander and chilli in a food processor and season with salt and pepper
- Blitz for 15-20 seconds
- Shape the chicken mixture into 12 small cakes
- Chill for 30 mins
- Heat the olive oil in a frying pan on a moderate heat and fry the cakes until golden
- Serve immediately, with sweet chilli sauce and garnish with the spring onion
