1.8kg Devonshire Red chicken wings
For the marinade:
60ml sesame oil
100ml light soy sauce
100g clear honey
125ml coke
100g soft dark brown sugar
1 pinch five spice
Method
In a suitable bowl whisk together all the ingredients for the marinade.
Place the wings into the marinade and leave overnight.
Pre heat the oven to 200°c then reduce the temperature slightly.
Place the wings and marinade into a roasting tray - loosely cover with tin foil if you are using a fan assisted (you may need to remove the cover in order to colour the wings)
Put into the oven for approximately 1 hour, stirring every 10 minutes.
The liquid will start to evaporate during cooking leaving a lovely, sticky coating. However if the wings are cooked but not sticky you can pour off the liquid into a pan and boil until syrupy, then coat the wings in it.
