  1. Soak the chicken brick for 15 mins in water.
  2. Rub the inside of the chicken with salt and pepper.
  3. Place the garlic cloves, lemon and bunch of herbs in the cavity of the chicken
  4. Chop the onions and lie them on the base of the chicken brick.
  5. tie the legs of the chicken together and place on top of the onions.
  6. Sprinkle a little salt and pepper over the chicken.
  7. Place the new potatoes, small onions and baby carrots around the chicken.
  8. cover pot and place in cold oven.
  9. Bake at 230c (450f) for about 2 hours
  10. For a crispier finish, remove all ingredients except the chicken after 1hr45mins and then return to the oven.
