The first ever Devonshire Red master class is to be given by Michelin-star chef Mark Dodson at his restaurant The Masons Arms in Knowstone, mid-Devon.
The session will be held on Wednesday 17 October, focusing on how to prepare and cook chicken to achieve maximum taste with minimum waste.
"It seems people just don't know how to cook chicken anymore," says Mark Dodson, whose restaurant The Masons Arms received a Michelin star for the second year running this year. "So much of it is wasted because we're just unsure what to do with it. We've simply forgotten or never learnt how to actually prepare and cook chicken to get the most out of it.
"This master class is going to be a fun and tasty session. It'll be about making the most of a product that's a staple in our diet, that's produced locally and can taste fantastic in lots of different forms."
The event is being organised by poultry producer Lloyd Maunder, which launched its Devonshire Red brand of higher welfare chicken in May at the Devon County Show.
"This is the first in what we hope will be a master class series with Mark," says Andrew Maunder, commercial director at Lloyd Maunder. "He's a brilliant chef who already serves Devonshire Red chicken on his menus. It's a great opportunity for anyone interested in cooking good food well to come and learn from a master."
The Devonshire Red is the breed of chicken reared exclusively by Lloyd Maunder in three higher welfare systems - organic and free range, plus corn fed which is reared indoors to RSPCA Freedom Food standards. All Devonshire Red chicken are grown on small family-run farms in the West Country, where their strong legs and inquisitive nature make them ideal for the higher welfare rearing systems.
